here's a recipie for a real easy, basic mustard sauce that's very good with green beans or gamey meat like lamb, faggot.

-1 cup chicken stock that's low in salt (when you make your own stock, never salt it before you freeze it)
-1/2 cup large grain/stone ground dijon mustard
-1/3 cup minced shallot
-4 tablespoons unsalted butter
-3 tablespoons heavy cream
-1 to 2 tablespoons dry white wine*
-3 to 4 sprigs fresh thyme*

*can be omitted if unavailable, but not recommended

soften shallots in butter with thyme at mid low heat until translucent. add wine, stock, mustard, and cream, bring to a simmer, then reduce heat to low. Stir frequently while reducing sauce, never allowing sauce to some to more than a simmer. Cook down to desired consistency. Keeps for up to 2 weeks in the fridge.

put sage, rosemary, thyme and a fuck ton of kosher or rock salt in a mortar and pestle, and grind the shit out of it. take any kind of chicken you want, and use a fuck ton of paper towels to dry it off. I mean, get that shit bone dry. rub the herb salt onto the chicken, and roast at 400-425F. ez
