I was at the very least expecting some kind of culinary rebuttal, but you went full retard and started spouting off nonsensical evolutionary bullshit. Humans stopped evolving the moment they became self aware. The condition of possibility for you knowing anything about human history - for the very concept of "history" - is that evolution no longer applies to humans. But getting back to the basic culinary sense of the terms...they are not analogous because IBUs are measured based on the chemical compounds present, regardless of the other ingredients and how balanced or hop forward the beer may be. In other words, bitterness as measured by IBUs is not the same as perceived bitterness. This was obvious to everyone when doubles and triples started becoming popular, but it's just blatantly obvious with the Hazy craze that's been going on for nearly half a decade. On the other hand, Scoville units are literally measured by perceived spiciness, or "heat". It doesn't matter what dumbshit scorpion reaper black mamba pepper you put in your hot sauce; the scoville rating is determined by the amount of capsaicin relative to all the other ingredients.
