I remember making some for a fancy salad. The yolks are mostly fat so they can really coat stuff. So we barely poached some eggs, then breaded and fried them in very hot oil so they browned quickly before they cooked through. It was a pain, but goddamn did it turn out gorgeous on the salad, and delicious. I only hope the crazy bastard who came up with it is still doing okay.

I frequented one that was open after hours (local laws). They shut off all the lights, locked the doors, and turned on a movie if it was just a few of us local workers in. You know how awesome it is drinking at 3AM with all the doors locked with Terminator on the big screen?
