it's made from a grain unique to east Africa called Teff. The teff flour is made into a dough which is given several days to ferment before being made into the flat cakes. These are then rolled up and served alongside dishes. You're supposed to unroll the injera as you need it, using pieces of it to pick up your food and eat it. Food can also be served on top of them.
