The kind of vegetarian cooking they serve at Sikh temples and Punjab style vegetarian restaurants. Chickpeas/lentils, vegetable curries and greens seasoned with cumin, coriander, ginger, chilies and turmeric, served with rice. Sometimes with a paneer or yogurt curry. Love that shit. Could eat it every day.

Here in NYC we have a bunch of cabbie stands run by Sikhs. They tend to sell pretty fucking delicious vegetarian curries from warming trays for cheap. You can usually get two curries in a bowl over rice for about $5, and it's a filling meal.

I'd love to blow that concept out in a fast casual scenario. Wouldn't work in the South or Midwest, but would probably do OK in the Northeast, and maybe California. The idea would be six Punjab style curries behind a glass counter. All vegetarian. A chickpea, a lentil, some spiced greens, a vegetable curry, a potato curry, a yogurt curry and a paneer dish. Two in a bowl over rice would be $7, three on a plate would be $9. Market the shit out of it as a healthy alternative to fast food. List on the menu that 2/3 of the offerings are vegan friendly. Probably offer burrito like sandwiches of chickpea and potato curry for $5. Also samosas.
