Like most small gamefowl they are great for braising.
Goooooood gravy.
Picrel is a pheasant and two pigeons, but it's the same procedure.
Brown them, throw some veggies and herbs in there with some stock or wine, simmer all afternoon.
Remove the liquid at the end and thicken it with flour or whatever you usually use.

They're pretty decent braised. Make for a nice gravy.
(This is two pigeons and a pheasant, which is why they don't look the same)

Since I had all day I would make a lot of roasts and stews and such. You can't go wrong with a nice stew.
After I started working really long hours I switched to quicker dishes. Pasta and fish and such.

That problem, if it were one, would apply to all wild game.
Check your meat for cysts etc. and cook it through if you're that worried.
And don't a fucking city pigeon. God only knows that those things have fed on.

I just braise them in the roasting pot.
The meat isn't all that great but the gravy is amazing.

I didn't stop eating them.
They're pretty standard fare on my camping trips since they're fairly easy to harvest with a bow.
The two smaller ones are pigeons.

It's cheap
It teaches you to use a damn knife
You get all the cuts instead of just one kind over and over
And at least where I live whole chickens are less likely to be pumped full of saline to increase the weight
