Mediterranean Chickpea Salad
Dressing:
Juice of 1 lemon (5 tablespoons)
Juice of 1 lime (2 tablespoons)
3 tablespoons olive oil
1 teaspoon dried oregano
1 teaspoon dried basil or 8 chopped fresh basil leaves
1 teaspoon black pepper
1/2 teaspoon kosher salt

Salad
30 oz chickpeas
1 cup chopped Italian Parsley
2 large tomatoes, chopped
1 large red onion, diced
8 mini cucumbers, chopped

Serves 8
