Haven't tried the corned beef or the pickles yet, so catfish first!

Pretty simple, not including all the steps
>dry catfish fillets
>season with [Old Bay]
>dip into milk or milk/egg mix
>[let soak for at least one hour]
>drain filets and then thoroughly coat in corn meal + flour mix (I use Andy's cajun breading)
>let sit for 20 minutes to dry for maximum crisp
