The goal is getting the most consistent grind you can. If your upper burr is kicked up on one side, even slightly, you're not getting as consistent of a grind. You can use the best burrs on the market, but if they're not aligned properly, why bother? Good choice on the kinu, I'm thinking about picking up the pourover burrs for mine soon.
