Beans are "cherry" seeds. The cherry has sugars and other good flavorful shit in the pulp. Leaving the pulp on while the bean dries lets flavor seep into the bean. Higher chance for spoilage, but you don't need a washing plant. Takes more time and more effort. Washed coffees are a quicker process and a "cleaner" cup since you're separating the seed from the fruit mucilage and losing that flavor. Honey process is somewhere in the middle. Its a pulped natural. Instead of letting the whole fruit dry with the bean, they remove the skin and leave varying amounts of the "goo" on. Takes even more work to avoid rot since the skin isn't attached to protect shit during drying.
