Perfect thread to ask this question. I was testing out this guy's recipe for making Mcdonalds-esque fries https://www.youtube.com/watch?v=0j9GGW6KsAo , and he instructs you to soak them in water infused with sugar and Corn Syrup. I get that The gist of it is to soak them in a sweetend liquid to infuse them with that flavor, but can some one please tell me why he recommends corn syrup in particular? I've never used corn syrup for anything. What does it do for the flavor that sugar doesn't already do?
