Might have tasted kind of like shrimp or lobster or crab. They don't seem to have a big tail full of meat with just a line of intestine going through it though so you'd probably gut and butcher this thing similarly to a fish. Idk though maybe their organ cavity could have been small as well.

What extinct animal would you like to eat the most?

For me it's Anomalocaris. Would love to crack one of these bad boys open with a dish of garlic butter and a side of coleslaw.
