Yes I'm the tanghulufag from last time. I made tanghulu successfully on my first attempt, it was crunchy and shit. But my second attempt made it so sticky it was hard to chew as FUCK.

Last time the color was quite yellow like piss, but now i wanted it to chill a little and be not-so-yellow so i could get to dip everything in the mixture on time before it overcooks. However, I think my problem with overcooking was when I waited for too long, rather than letting the mixture be yellow. Should I wait till its yellow next time?

Also, I DO NOT have a candy thermometer to measure. I dipped (heh) only a spoonful of my mixture into cold water and it seemed fine and it did stick, but it wasn't hard enough. Is there a specific time to wait? here is the recipe i used:
