i was gonna cook it in the oven but I have no tinfoil to cover it, am i fucked?

i bought it two days ago and it was expiring today, but i froze it till today. if I defrost overnight will it still be before the exp date. im concerned its too late at this point today to thaw and cook this beast of a shoulder

Sirloin is too lean to result in a good slow cook.

It's better when grilled (chopped into steaks or rolled) or stir fried.

Shoulder and shoulder arm picnic (pork cushion) is what you slow cook.

Just got a 3.5 lb Pork Shoulder for $4.00

I have a gas grill, was going to do it on that. Any one know the proper way of doing it? Do i just rub spices and let it roast on low heat for a while?
