I think traditionally it's either, but I would just use the cheapest cut of beef you can find.

You're chopping it thin and putting a bunch of cheese and onions on it. No reason to pay $10+ a lb for ribeye, and you're getting extra fat content from the cheese and oil you cook it in so no need to worry about marbling.

Also have you ever considered making a pork and rabe sub? I think they're superior.
