light beer was introduced in the 80's if i remember correctly, coke was also big then. you could argue any number of reasons, but like light cigarettes, the alternatives let you drink and smoke more for the same price when prices fluctuate to meet economic changes over time and no one notices the difference.
you get used to the taste and buzz, you associate it with american events and other icons, boom.

sure it's easier to mass produce the light variants. i'd be willing to wager however that more than 70% of the of-age drinkers that exist today who actually drink coors probably think banquet and high life are some kind of variant of the light versions - stronger, more beery, bitter, expensive, etc.. it's just how some people make money and other people spend it.
