Try lowering the temperature while you cook the roux. Martha Stewart's classic recipe is good.

Try Martha Stewart's recipe, and use the best cheese you can find. Read her notes for substituting cheese. I usually include four or five cheeses when I make it. Make sure you truly thicken the roux, even though it takes around 50 minutes if you make the full recipe, Don't underbake.

The only problem here is that this is lazy. Make the Martha Stewart recipe with some really good cheese and make sure to ass breadcrumbs.

Make a 9x13 casserole pan of macaroni and cheese ahead of time and bake it up on day 2. Use a disposable pan so you don't have to wash anything.
Get a bag of clementines.
Make some mashed potatoes ahead of time and reheat in the microwave under a damp paper towel.
Ice cream and cereal topped with whipped cream.
Tater tots.
Obviously snack foods mentioned ITT.
Bake some cookie bars or brownies.
Muffins. Depending on budget, get some pastries.
If you like making soup, some soup would be nice and easy to heat up.
Just keep a big cake or pie around and take slices when you want them. Keep the serving utensil in the fridge with the cake or pie so it doesn't need to be washed.
Yogurt and granola, if you like that. Don't worry about nutrition, just something tasty.
It does depend on how much you want to spend time in the kitchen. I'm assuming you're willing and able to cook ahead of time, but don't want to do dishes once you are there.
