So what? Some cheeses, like the specialty cheeses he used in this recipe, taste better when they're still solid. He heated the cheese up enough to soften it and warm it so you don't get a bite of cold cheese.

Kimchi adds a nice acidity to balance out the richness of the cheese, as well as some piquantness and an interesting contrast between the warm cheese and the cold kimchi which adds new dimensions to the dish.
