Pierce a small hole in the bottom of the egg before boiling it.

boil for about 8 minutes then take them out and toss in ice water for a few minutes to halt the cooking process. peel and toss in your ramen.

if you want a real ramen egg I recommend marinading them. It takes a few days but I love this shit:

prep a bunch of eggs like I outlined earlier.

mix 1 cup water, ½cup sake, ½cup soy sauce, ½cup mirrin, and ⅛cup sugar in a pot. bring to a quick boil then let cool, stirring along the way.

once cool, store your eggs with the marinade in ether a ziplock bag or Tupperware container for 3 days. they'll be good to go at that point and last a while too. enjoy your authentic ramen eggs!

feel free to lower the sugar if you feel the eggs are too sweet

ha! I was about to post this too, but for me it's one part water, half mirin, half sake, half soy sauce and one quarter part sugar.

one day really isn't enough imo, two to three really gets the flavor in

I've been making my own ajistuke eggs for ramen and rice dishes. weeb as fuck but also delicious
