What is the point of bay leaves? Every recipe calls for their inclusion and then tells you to take them out after an hour. They taste like nothing and they add no flavor to things they're put in.

Bay Leaves. What do they do? What are they good for? I've used them in so many recipes from soups to crock pot meals and I cant help but wonder every time I drop a bay leaf in the pot "Why am I doing this?" I heard the best way to find the taste of the bay leaf is to put a few leaves in hot water and then drink it. I did that just now. Its not a very significant taste. Whats do you think?
