since you are asking something under a similar vein as well I thought I would bring it up.

I have been looking for something new, so far the buried eggs in my backyard just tasted earthy and the larvae didn't leave the robust taste that casu marzu does. Currently I am trying a new food trend based around live fermented meat that way you get the best of both worlds; the freshness of the living and the rich taste of the fermented. I currently have a small calf that I have been feeding and soaking in a vat of vinegar (it tastes fantastic at the moment btw) but it isn't soaking evenly and refuses to eat the pickles I have been feeding it anymore. suggestions?
