Shakshuka

1 tbsp olive oil
1 onion (Chopped)
2 cloves garlic (minced
2-3 cups tomatoes (fresh or canned)
1 Bell Pepper
1 Cup of your favorite pepper
2 tbsp tomato paste (Optional, for thicker sauce)
1/2 tsp Tumeric
1 tsp paprika
An assload of Cumin
1/2 tbsp Cayenne
Chili flakes to taste
Salt to taste
Pepper to taste
4-6 eggs
1 tbsp fresh chopped Cilatro parsley (optional, for garnish)
1 tbsp Feta (Optional, Crumbled for garnish)

Dice everything. Saute onions, garlic, bellpeppers, and peppers until soft. Add spices. Add tomatoes and tomato paste. Cover and cook until its somehwere between a chunky stew and a sauce. Use a spoon to make depressions in the top and crack in eggs. Cover and poach to your liking. Serve with crusty toasted bread.
