What are your ultimate fried rice tricks?
For me it's:
>Scrambling the eggs or make a rough omelette cut in pieces before adding them to the rice
>A little bit of thai red curry paste and lots of sambal (chili paste)
>Frying everything in bacon fat and using the crispy bacon as a topping
