I'm actually surprised that indian street food snacks haven't taken off in the west yet. I think they will. But there's an image problem because people just think indian food is rich meat curries but these are light.

pic related, fried crisp shells of thin pastry, with spiced chickpeas, onion and potato inside, covered in yogourt, green chilli chutney, and fruity tamarind chutney, coriander, and more crispy bits. Eat them in one bite.

Fucking delicious, but has to be made fresh to order or it goes soggy and does take some skill.

There are a lot of dishes like this 'chaat' which i think will be the next big food trend in the west one day.

japanese food is even more about rice
their word for 'meal' is the same as their word for rice

india has a lot of great bread too, with high level technique, like roti and paratha (with many flaky layers and fat folded into the layers, like puff pasty). Or naan which is cooked at extremely high temps in a special wood oven, just like pizza.

there is also indian food which is quite delicate like pic related

It's not though. You have very very high heat tandoor cooking which gets that char on meat and on Naan. Similar technique to what Italians do with pizza ovens. That's interesting technique.

They also do a lot of textural things, like this crispy shell dahi puri.
