I've made a lot of chili in my life. I've even made Lady Bird Johnson's recipe. (https://www.saveur.com/article/Recipes/Lady-Bird-Johnsons-Pedernales-Chili/)) And I'm now old enough and don't care enough to just like what I like. All chili is fine except for Cincinnati chili which is literally just Greeks ruining spaghetti bolognese.

What I do is beef, onions, +/- beans, and tomato paste. Add garlic powder, oregano, chili powder, ground cumin, MORE ground cumin. I always add at least one bottle of beer. If it's a light beer, I'll oftentimes put in a bit of cocoa powder; otherwise if it's a dark beer, I won't. The rest of the liquid is water or chicken stock.

It is very important to me that chili has a tiny bit of tang. I adjust tang and spice levels by adding, tasting, readding, and retasting over and over again while juggling chile powders, hot sauces, and apple cider vinegar.

Cook until you think the flavors are more or less to your liking. Then, add masa for flavor and thickening. The masa flavor is an absolute must. It does not taste right without it.

Serve with a platter of sour cream, cheese, and green onions.
