Best wings in Miami have me ruined for every other wing place I ever go to when I travel. Floppy thick skin, meat that sticks to the bone or is tough, undercooked, overcooked, oversauced, skimpy, hairy, busted bones. Ugh. You can be very disappointed getting wings most everywhere, once you've had some Miami style wings, you really get spoiled.

"Miami style" refers to Hole in the Wall, or Sports Grill style, where a fried buffalo sauced wing is brushed with a seasoned garlicky, slightly jerk like, worchestershire tangy sauce and then grilled until the skin is crispied back up and has that funk of worchestershire. It's heavenly, where you can one bite the savory wing and bite off all the meat and skin. It simply falls away from the smooth bone in one single smooth step. The skin is so perfect.

Every now and then you can find good wings asian style, such as Sakura in Miami or Yummy House in Sarasota or a "butter wing" at a pho noodle soup restaurant like in DC. Wings that are sliced down to the bone, getting that well done nature that also releases steam to ultimate crispness. Served with a simple lime wedge and maybe a plate of 5 spice or simple salt n pepper. Yummy House tops the platter with an amazing amount of green onion, cilantro, fried garlic goodness. See pic. Totally craveworthy.
