EVOO should almost never be heated due to rancidity happening immediately due to oxidation, thus you are digesting bad lipids which poorly repair your body. Think of it like the equivalent for lipids what denaturation and misfolding is for proteins. Also, as that other anon mentioned, many olive and avocado oils are cut with seed oils, making them awful for you. Cook with well-sourced butter, ghee, tallow, lard, schmaltz, duck fat, avocado oil and coconut oil. The last two should be cold-pressed and come from the same location on the bottle.

And what, pray tell, "fats" are you eating? If they're seed oils and poorly sourced olive and avocado oils instead of grass-fed, grass-finished butter, ghee, tallow, etc., then it's no wonder you're getting inflammation. It's also no wonder why all the (((studies))) you read tell you fat causes inflammation, when good lipids try their best to heal the damage done from inflammation.
