theres a type of shortbread we make in my family every christmas
you whip the ever loving shit out of it and it just melts in your mouth
they're best as spooned out drop cookies, preserves the most air

you can make good non-dry ones but I know what you're talking about, some people make them more like ginger snaps

i'd recommend to use well packed brown sugar instead of white sugar, stays moist
otherwise you'd need to add some molasses
brown sugar, egg, peanut butter

some people do just eggs and peanut butter but those people are what I like to call fucking awful people
they're as bad as people who make raisin oatmeal and put them in the same jar as the chocolate chip oatmeal
