Just look through the packages for one that has decent marbling
I have seen Choice steaks with better marbling than the prime rib I buy from costco

Those were nearly around 30oz each pre cooked

If I get smaller cuts I serve them whole

To make the gravy
Brown some onions in a pan and add in the mushrooms near done cook a bit down not a ton
make a simple roux 50/50 mix flour butter 1 tablespoon or so no need to measure use your god damn eyes.
I use 50/50 mix of beef broth and milk for the liquid maybe 2-3 cups totals so 1.5 each
Bring to boil add in salt and a ass load of pepper white or black I aint racist on the pepper type
