My gym partner/roommate just told me that mixing fats and carbs (specifically simple carbs) is bad for you. He explained that this is because your body prefers to use fat as an energy source over anything else and this results in the sugar being stored as fat.

I always try to add some fat (usually avocado, olive oil, or nuts) to my veges/fruits because I know certain nutrients absorb better if ingested with fats, and I thought that mixing sugars with fiber or fat slows digestion and prevents an insulin spike.

Is there any truth to what he said or is it all broscience? Have I been doing it wrong?
