lets set the record straight, you cut raw zucchini and put it into vinegar, of which youll put it in your fridge and let it sit there for a bit which is ok.
this is not pickling though. i see your mustard seeds in there, onions are a classic touch, shit its either cider vin or white vin with maybe a touch of turmeric i see as well? nice. but those arent pickled.
pickling is the preservation of food, without refrigeration those will spoil on the quick, be careful.

i just moved as well and i have an acre of land now, this season was my first garden here where i have a ton of room. i grew
snap peas cuz i love them, grean beans as well
gerkins,
all kinds of peppers,
chilis
roma tomatoes and a few slicers as well
2-3 zucchini is plenty, the yellows are nice because theyre less common
strawberries
rasbperries
pumpkins

ive been canning all season long but i do hot water bath and mason jars, which i suggest you do instead of reusing old onetime jars.

in fact today im doing my tomatoes so im not looking forward to peeling pounds and pounds of romas. so ill be making salsa and diced toms with whats left, i have to get my pickles done if theyre not bad already, im also going to do more sweet banana slices and nacho jalapeno slices.

if you like spicy shit i recommend candied jalapenos. fucking bomb

i have snap peas, sweet peas, gerkins, slicer cuckes, green beans, summer squash, zucchini, banana peppers, jalapenos, habaneros, planted cayennes but got cherrys ???, bells, romas, cherry toms, pumpkins strawberries raspberries....
....and this was just my year one garden. we just bought the house last fall...
