THE HIPSTEREST PEPPER POPPERS
You'll need:
-About a dozen Anaheim peppers
-Smoked gouda, shredded
-Neufchatel, softened
-Mascarpone, softened
-Scallion tops (green onions are for plebes)
-Serrano ham
-Sourdough bread crumbs (I make my own)

Cut the tops off the peppers, and seed them. I use a Williams and Sonoma Pepper Seeder. Lightly sear the Serrano ham with a brulee torch, and julienne. Blend the three cheeses together, and add in the seared ham. Stuff the peppers, and roll them lightly in oil, then the bread crumbs. Bake at 334 F exactly for 14 minutes, turning once. Let cool for 8 minutes, then serve hot with a microbrew and discuss Sylvia Plath.

Note: keep napkins on hand to help get cheese out of your beard.
