You’re kind anon but nope I’m not a chef (I made the second pasta - with turnip greens), probably it’s because I’m Italian so I make a lot of pasta.

Making that dish is very easy.

>wash your turnip greens and clean them
>cut the stems
>in a pan, add a generous amount of olive oil, a crushed clove of garlic (peeled), some dry chili peppers to your taste and 2-3 anchovies on oil
>fry the garlic in the oil and melt the anchovies
>remove the garlic when it’s golden and the chili peppers too
>bring the water in a tall pot to a boil and add sea salt
>toss the turnip greens in and boil them until they’re ready
>do not discard the water in which the turnip greens have boiled and keep it boiling
>toss the turnip greens in the pan with the flavoured oil and sauté everything for a couple minutes
>boil the pasta until al dente in the pot with the turnip greens flavoured water
>transfer the pasta to the pan with the sauce + turnip greens and add a ladle or two of starchy cooking water
>turn on the stove and let the pasta water be absorbed until a thick starchy cream has formed
>turn off the stove and add some other extra virgin olive oil

Are you familiar with cooking octopus?

>remove the eyes/beak
>boil until soft covered in salted water with pepper grains, 1 onion cut in half, 1 carrot and 1 celery stalk
>cut the head away and clean the interior then make stripes out of it
>separate the tentacles and remove the soft skin on the sides with a knife then cut everything into pieces (don’t make thin slices)
>warm the EVO oil in a pan and sauté everything on medium heat until it starts to brown a little (don’t exceed with the time otherwise it will become though)
>make mashed potatoes how you prefer (steamed, boiled) and season them as you like (a bit of pepper, salt, nutmeg) then press them into a baking mold with the correct shape (at this point you can insert a cube of cheese inside the mini pies)
>cook them in the oven for some minutes
>assemble your finished dish and pour a spoon of stracciatella over the potato pies

You can avoid chopping the tentacles and sauté them to have a pic related result

Yes I love it, absolutely.

It’s also easy as fuck to make but people don’t know this so it’s ok.

Protip: use a frozen and eviscerated octopus because frozen octopus is more tender thanks to its fibres being broken by the low temperature
