roast shop ducks are fucking delicious but you do lose the crispy skin when they aren't fresh.
I normally buy those ones and put them in a red curry or a stir fry
top restaurant peking duck with crispy skin is next level

god i love duck so much.

The stock and then gravy you can make with the bones is amazing too.
