This. I've been wanting to tackle pho for a while now but my sister keeps tossing the bones I've been saving. I swear, someday, I'll just use hers, instead.
I've had the real stuff and the slap-dash paste and insta-noodles, while good, just don't compare. That stuff takes at least all day, maybe two to get it right.

Most Mexican food, Central American food I can easily do at home. But the Relleno... That's my go-to when I go out. That, or whatever specials that might be for the day. It's my mom's favorite, too. Probably because she doesn't want to bother at home, as well.

Reminds of an Adam Carolla rant about how he wasn't Taco Bell material because he couldn't get a job there. All Mexican food is about three to five ingredients: Tortillas, eggs, cheese and rice. Tortillas, meat, cheese, beans and rice. Tortillas, rice, beans, meat and cheese. Veggies are on the side.

Oh yeah. Molé is something that falls into OP's category. That stuff is awesome but takes FOREVER and you have to have the right spices. Restaurant is best in that case. I don't mind paying a pretty penny for a good molé.
