At the most basic level: aged sheng, young sheng, and shou.
There is a lot more nuance (semiaged teas, storage conditions, terroir, tree age, big factory vs farmer vs boutique productions, oldschool vs modern processing, ect) but you don't need to know them starting out. Also how much experience do you have with tea? Do you own a gaiwan? and are you familiar with gongfu brewing?
