I'd say the chest freezers electricity use is actually pretty low since you don't open it as often as you open your main fridge/freezer. Also it doesn't release as much cold air.

The freezer pictured could easily fit in an apartment also. It will work with any meat. As far as how long the quality lasts, I have eaten meat 1-1.5 years old from a freezer and have noticed no freezer burn or dip in quality. Again, this probably has to do with the fact that the chest freezer is only opened a few times a week at most vs a regular freezer which is opened multiple times a day.

I don't eat bacon and eggs every day, but I eat a lot of eggs, I have to eat them daily as I am getting a dozen eggs a day now. I have 2 chest freezers full of lots of meat and bacon is a great way to get extra fat for cooking. I probably share a package of bacon with everyone in the household maybe once every month and a half.

Actually a common breakfast is usually plain oatmeal and a couple eggs.

But I don't believe bacon and eggs combined with a clean diet and active lifestyle is going to take years off my life like drinking soda, alcohol, or smoking cigarettes. All three of which I do not do (unless you count a shot glass of homemade wine with dinner twice a week heavy drinking).

I have way more canned goods than you. I'm pretty sure I could go 6 months without going to the supermarket, but I enjoy dairy and out of season produce too damn much.

Considering I eat an omnivorous diet and also partake in buying large animal shares (currently am working on 1/4 beef i got in august), I slaughtered my last duck in october and still have 11 left out of 21 ducks slaughtered this autumn.
Keep in mind I am a nose to tail eater, so I have been working on parts not included with most supermarket poultry. 21 duck heads, 42 duck feet, 21 necks, and of course organs and fat, it stretches itself out, I literally just finished cooking the last of my duck organs and heads today (they had to be cooked or they were at risk of freezer burn due to how I stored them).
I also have a garden and buy cheap dry goods in bulk. I plan to begin incubating my next batch of ducks next month. And I plan on getting geese and chickens this year. More for behavior, the eggs and meat are a byproduct of their benefit to my little eco system I'm making.

No one is going to live off of just duck. Even if you have a factory farm you wouldn't do that.

To gut: Using a freshly sharpened knife using careful delicate cuts, you cut a vertical line from the base of the ribs and around the vent, being careful not the cut the intestines (I don't feed the ducks before slaughter). You then got to work around the membrane around the carcass to loosen up the insides. I have a certain order I pull everything out. Heart, liver, crop, intestines (with gizzard attached), testes, and then the lungs, which are pressed against the back of the duck and are easy to miss due to a membrane protecting them.
I save everything except the intestines. The gizzard, which is MASSIVE, is full of rocks when you cut it open, do NOT let it get into your sink. clean them in a bowl of water and remove the membrane. I usually let the gizzards sit in the fridge overnight which helps with peeling the membrane.

It is time consuming, but it is incredibly rewarding and for personal use I find it almost relaxing. I like to listen to audiobooks while I pluck. My psychotic vegan sister would have stroke if she knew I didn't feel guilt slaughtering these ducks. I kill them as quickly as a vet euthanasia. Knock them unconscious (sometimes killing them) on a killing cone and then with a freshly sharpened axe cut the head off and let them bleed out. I always thank each duck before each slaughter and promise they won't go to waste.
