2 lbs boneless skinless chicken breasts cut into 1/2" thin thick strips
Place in a freezer bag with 1/2 cup buttermilk, 3 bay leaves, 1/2 tsp salt, 1 tsp pepper, 1 tbsp cayenne pepper. Refrigerate overnight.
Remove Chicken from fridge, drain off buttermilk and remove bay leaves. Add 1/2 cup all purpose flour to freezer bag and shake vigerously to coat chickens. In a wide shallow bowl beat 4 eggs with 1/2 tbsp cream. Fill another wide and shallow bowl with 2 cups panko. Roll flour covered tendies in eggwash and then roll in panko untill properly covered. Place in a large bowl until all chickens are breaded.
Heat 1/2 cup vegetable oil to medium high in a pan. Place chickens in pan allowing enough space between each piece so that they fry and don't end up steaming. Cook on each side for 3-4 minutes only flipping once. Cook the chicken in batches and allow the finished pieces to rest on a paper towl covered plate. When the plate is full cover with another layer of paper towels and top again. Repeat until all chickens is cooked. After the final batch is completed allow to rest for a minutes until the last batch has cooled off enough that the breading isn't hot to the touch. Fill a new freezer bag with 1 cup of Frank's and placed warm tendies inside. Shake vigerously to throughly coat each piece with sauce.
