I want to start a BBQ trailer but problem is you cant live where you prepare food and I need to smoke the briskets over night then sell them. How do I prepare a brisket for sale and have it smoked for the customers without actually living at the location? I need the brisket to be smoked and tender for the customers.

Personally, I like smoked beef brisket and pork ribs with Mesquite marinade.
