I love fruit, I must eat 2-3 pieces a day on average. Humans can extract most the sugar and water soluble nutrients from fruit. Our gut bacteria can also ferment some of the fiber into fats.

But you are basically eating sugar water with almost no protein and not enough fat.

You simply can't live off sugar alone. Plants can but the dry weight of plants is mostly carbohydrates. Cellulose is just chains of simple sugars.

The dry weight of humans is 50/50 proteins/fats with some minerals mixed in. Our liver and muscles store enough sugar for about 24 hours usage, whereas our body stores 6 weeks of fats.

Fruitarian lose weight because their body is cannibalizing it's own proteins and fats for the cell regeneration process. They provide enough energy for the body as sugar but no actual building materials.

Hence they come to look like the people in this video.
