soak navy beans overnight. fry up bite-size sausage slices (or hot dog slices, whatever you got) in a sauce pan. rough chop 1/2 onion and and garlic clove. Add water until onions are half way submerged. bring to light boil (but above a simmer) and put on lid for 2-3 minutes or until the sausage is brown. Add beans and a little more water. Bring to boil and boil for a couple minutes. season. top with sliced tomatoes, window greens, celery leaves, maybe some louisiana hot sauce, melted butter or mozzarella--if you can somehow find them cheap, roast cherry tomatoes or pearl onions and warm them up at the end in the stew--alternatively, you could put a portion in an ovenproof bowl, cover top with bread crumbs and stick under the broiler until golden brown. serve hot.
