My guess is that they are packed in nitrogen gas like some of the bagged salad mixes are
The nitrogen gas prevents oxidation, but the cells die from asphyxiation. When you open the package, nothing has browned/oxidized and no bacterial or fungal growth has occurred, but the plant material tastes weird because the plant cells have been dead for a while
