1. It's just color
2. Beat the shit out of it with a mallet and don't cook it too long, you'll have to experiment to get the timing perfect and it'll depend on exactly what you're cooking.
3. Depends on the dish, they're not the same thing. Get some and try them both out, experience is the best way to know about stuff. You're not specific about what dish you want to substitute for.
