I'm saying its years old oil sticking around in the grind path and months old oils on the dark roast beans. I clean my burrs whenever I grind up more developed coffee for my buddy to french press because that roastier flavor carries over into my lighter beans.

Sour, skunky, chemical, stale, off. You know that weird funk when you bring up olive oil too high? Degraded oils being exposed to oxygen.
