That's the cleanest looking gutter oil I've ever seen.
That said, they weren't cooked in hot enough oil.
the steam is supposed to drive the oil away from the food--those balls are SOAKED in it.
The other thing that goes wrong is ALL the water cooks out, then there's no steam to drive the oil out, but that doesn't look like the case here.
