I usually just go with a chicago style dog and vienna beef since it's the most wide spread and good quality. They use fat trimmed from brisket for their hot dogs.

Fancy sausages with fancy ingredients have grown exponentially in popularity over the last 10 years around here, but not fancified hot dogs yet really.

There's a few higher end places that make their own hot dogs from scratch or top them with different ingredients but it's not as widespread as I think the west coast which they'll put pretty much anything on one. Pictured is a restaurant that makes their's from scratch.

Sonoran hot dogs seem to be gaining in popularity though, which isn't surprising considering the high volume of mexican restaurants and mexicans in the city.
