To be honest I haven't been able to taste a significant difference in a loaf with or without oats or breadcrumbs.
The difference in in texture. Meatloaf with rolled oats is soft and fluffy. There's also a different in how it hits your stomach. Without oats the meatloaf hits heavy and feels hard to digest. With oats it doesn't land in your stomach like a brick and it doesn't feel as hard to digest.

This is the better homes recipe my mom used. She substituted oats probably because she never had breadcrumbs.
For milk she used evaporated milk m and often used tomato paste mixed with water rather than tomato sauce.
