I recommend a 12yo macallan, laphroig quarter cask, and a tomatin
The macallan is a classic speyside; light and floral with honeyed sherry notes
the laphroig is peaty as all fuck and yet quite rich and syrupy
the tomatin is a great example of the highlands generally (their peated whisky is also sublime)
