No, what OP picture is has nothing to do with chicago giardiniera. What Chicagoans put on italian beef and pasta is pic related, it's an oily spicy cooked condiment, it doesn't have vinegar at all. If you put the vinegar giardiniera like OP on an Italian beef it would be disgusting

I don't eat much of it because of the amount of oil and salt but occasionally I'll grab a few pieces or an extra spoonful just to cronch on.

First, why would an italian beef have cheese at all? Thats a philly cheese steak. Also, you dont use straight pickled peppers in vinegar, you need real giardiniera in oil like pic related, which is the true flavor of Italian beef. Then you need good chewy italian bread, that you dip into the broth to soak the whole sandwich, but it doesn't fall apart.
I like the idea of smoked meat on a beef sandwich, though, and would gladly devour one of these with delight and wouldn't complain.
