That's because it's a chemical process that breaks up sulfur bonds of the hair, so that you can bring it into a certain shape in which you then can reform the bonds. It doesn't really matter if you take curly hair, force it into a straight position and fix it or the other way round.

It is some surprisingly nasty chemistry, though.
